Food allergies are relatively recent topic and are rapidly developing into an epidemic that cannot be ignored, least of all by the hospitality industry. It has been in the past 20 years that food allergy conditions have increased fourfold and statistics reveal that at present around two people out of every 100 in the UK suffer from a food allergy (Allergy UK 2012). As a result the hospitality industry has been challenged to welcome and take on the responsibility of accommodating patrons with a potentially life threatening condition.
