Ce travail a porté sur l'extraction de substances naturelles de sous-produits de la vigne en mettant en œuvre des procédés "verts" tels que l'extraction par eau sous-critique et la purification par filtration membranaire. Ces procédés représentent une alternative à l'extraction par solvant, traditionnellement utilisée dans la production de substances bio-sourcées. La majeure partie de cette étude a été menée sur des marcs de raisin de cépages variés, l'extraction a été optimisée et comparée sur la base du rendement, de la composition chimique et de l'activité antioxydante des extraits obtenus.
