Le «Swell-drying» est un procédé de séchage couplant une étape de déshydratation par air chaud à la texturation par Détente Instantanée Contrôlée (DIC). Dans le cadre de ce travail de recherche, la carotte et la pomme sont utilisées comme aliment modèle pour le traitement de la plupart des végétaux.
