L'abattoir est un observatoire privilégié de la santé des bovins, permettant d'envisager une surveillance de la population bovine à partir des données d'inspection sanitaire qui y sont collectées. Mais la valorisation épidémiologique de ces données fait face à des difficultés (complexité des données, nombreux mouvements des bovins de leur naissance à l'abattoir). Afin de gérer cette complexité, une approche statistique (analyse multifactorielle et classification mixte) associée à des avis d'experts ont permis d'établir une typologie des lésions observées à l'abattoir.
