La pomme de cajou est une matière première qui n'est pas exploitée en Côte d'Ivoire alors qu'elle présente un potentiel nutritionnel important. Dans ce contexte, l'étude réalisée s'intéresse à la valorisation des pommes de cajou en jus de fruit. En partant du jus brut de pommes de cajou, il s'agit d'étudier un procédé qui couple plusieurs techniques membranaires pour la production de jus clarifiés et concentrés. Les températures modérées de traitement doivent permettre une meilleure préservation du potentiel vitaminique et sensoriel de la matière première.
