Dosis- Wirkungsmodelle nehmen im Rahmen von quantitativen mikrobiologischen Risikobewertungen eine zentrale Rolle ein. Die für den betrachteten Krankheitserreger unterstellte Dosis- Wirkungsbeziehung stellt dabei insofern einen kritischen Punkt dar, da die vorgenommenen Schätzungen der Erkrankungswahrscheinlichkeiten bei durch Lebensmittel bedingten Erkrankungen mit erheblichen Unsicherheiten belastet sind. Diese Unsicherheiten ergeben sich zum einen aufgrund der eingeschränkten Menge, Qualität und Verlässlichkeit der zur Verfügung stehenden Daten.
