Sustainability and food governance: contribution of territorial short food supply chains in two case studies of Colombia and Spain

Today, the development of more sustainable food systems is a high priority in both research and international policy agendas, where dynamic social, environmental, and economic issues are setting new scenarios in relation to the increasingly global food system. These challenges have resulted in the emergence of collective and individual responses within territories, one being the Alternative Food Networks (AFN), and particularly important among these networks are Short Food Supply Chains (SFSC). In this context, the overall objective of this thesis is to analyse the influence of the territory on the configuration and operation of short food supply chains (SFSC) in a place-based approach, in other words in the territorial short food supply chains (TSFSC), and to quantify the effects of this influence on the sustainability and food governance of the territory. For this purpose, a methodology has been designed and implemented to tackle the three main issues of this thesis: territory, sustainability, and governance.La consecución de sistemas alimentarios más sostenibles se ha convertido en una alta prioridad tanto a nivel científico como en la agenda política a nivel internacional. Diferentes factores sociales, económicos y ambientales han configurado un nuevo escenario para la alimentación, en el que el sistema alimentario globalizado, caracterizado por la gran distribución de insumos y alimentos, se ha impuesto. Frente a ello, han surgido en los territorios diferentes respuestas de carácter individual y colectivo como las Redes Alimentarias Alternativas, y dentro de estas, los Canales Cortos de Comercialización que parecen ser de las más generalizadas.En este contexto, el objetivo general de esta Tesis Doctoral es analizar la influencia del territorio en la configuración y el funcionamiento de los Canales Cortos de Comercialización (CCC) en un territorio definido, es decir, en los Canales Cortos de Comercialización Territorial (CCCT), y cuantificar los efectos de esta influencia en la sostenibilidad y la gobernanza alimentaria del territorio.
