O objetivo do trabalho foi avaliar os principais índices de qualidade e identidade do azeite de oliva e compara-los com a Resolução no 22/77/MS, Codex Alimentarius e União Européia. Foram analisadas vinte amostras divididas em duas épocas, provenientes de dez marcas diferentes. Foram avaliados a rotulagem, acidez, absortividade, iodo, composição em esteróis e em ácidos graxos, teores de ácido elaídico e esqualeno. Das marcas nacionais, somente uma apresentou rotulagem correta; a acidez variou de 0,15 a 0,75% em C18:1; a absortividade a 232 e 270 nm foi compatível para mistura de azeite virgem com refinado ou de virgem com extração refinado; o índice de iodo variou de 85,88-127,46 gI2/100g, com 66,6% das amostras reprovadas.
