Istraživanje se temelji na poboljšanju procesa enzimske hidrolize pulpe šećerne repe (PŠR) s ciljem povećanja oslobađanja šećera. Komercijalni enzimski preparat (Viscozyme L) i statističke metode primijenjeni su za optimizaciju procesa hidrolize. Metoda odzivnih površina (RSM) je korištena za optimiziranje procesnih parametara nakon hidrolize. Najviša koncentracija šećera, 7,80 g/L, dobivena je pri pH 4, temperaturi 0 te 80 L enzima/g s.tv.
