Ekstrakt pokožice grožđa obiluje polifenolima - skupinom organskih spojeva koji imaju antioksidacijsko djelovanje, odnosno smanjuju oksidacijski stres. Reciklaža predstavlja odlično ekološko rješenje tretiranja vinskog organskog otpada budući da se godišnje izdvaja tisuću tona pokožice tijekom vinifikacije. U ovom radu istražen je zaštini učinak bioaktivnih spojeva iz ekstrakta pokožice grožđa na oksidacijski stres potaknut hiperlipidnom prehranom u miša. Istraživani biomarkeri oksidacijskog stresa u jetri i bubrezima bili su malonildialdehid (MDA), karbonil proteini (PC), superoksid dismutaza (SOD), katalaza (CAT) i reducirani glutation (GSH).
