Influence of organic and inorganic selenium on broiler chickens productivity and quality of poultry

Aim of the thesis. To investigate the influence of organic (Selisseo 2% Se) and inorganic (sodium selenite) selenium on broiler chickens productivity and quality of poultry. The goals of this work are to determinate the influence of organic and inorganic selenium on the productivity of broiler chickens, morphological composition of broiler chickens carcasses, the physical and chemical characteristics of the poultry meat, the effect of selenium accumulation and concentration of malondialdehyde in breast muscles, the amount of biogenic amines, fatty acids, volatile organic compounds in the broiler chickens breast muscles.Research methods. The feeding test was performed with a 1 - 42 day old 100 000 broiler chickens line combination ROSS 308, which were divided into two groups of 50 000. . The following measurements were performed during test: each week the individual weight of broiler chickens, the daily consumption of the feed and water, live ability. The morphological composition of carcasses, physico-chemical properties, accumulation of Se, amounts of biogenic amines, fatty acids and volatile organic compounds and the degree of oxidation of meat lipids were performed.
