Microbial analysis of raw materials and substrate during all phases of thermal processing revealed the most efficient methods for industrial mushroom cultivation. The aerobic fermentation in the upper layer is preferable if using long term stored material. The oyster mushroom strain HK-35 was used for testing. An increase in biological efficiency with 37% was found for aerobic fermentation in comparison with stream processing.
