Since the end of the 20th century, new models of sustainable agriculture (organic farming, agroecology, permaculture, etc.) emerged in the North and in the South to respond to the contemporary systemic crisis. The Cusco region, in the heart of Peruvian Andes, became established as an archetypal globalised territory, where endogen and exogenous, modern and traditional influences converge. As such, it constitutes a perfect laboratory to analyse this transition process toward more sustainable agri-food systems.
