Les quitinases són glicosilhidrolases (GH) que catalitzen la hidròlisi d’enllaços glicosídics β(1→4) de polímers de quitina i quitosà. Les quitinases de la família GH18 presenten activitat de transglicosidació i poden catalitzar la formació de nous enllaços glicosídics entre un sucre donador i un acceptor, i obtenir així quitooligòmers (COS), que tenen diferents aplicacions biotecnològiques.
