Polyphenols, such as phenolic acids and anthocyanins (ACNs), are widely studied for their protective effects against oxidative stress and inflammation. Recently, in vitro and in vivo studies suggest that polyphenol compounds may modulate lipid metabolism by preventing atherogenic and atherosclerotic processes.
