Increasing consumption of olive oil and table olives has recently determined an expansion of olive tree cultivation in the world. This trend is being fostered by the recognized nutritional value of the Mediterranean diet. The aim of this work was to test a portable vis/NIR system for the analysis of ripening parameters (soluble sugar content SSC and texture) of olives before to be processed, both for fermentation process of table olives or for extraction process of olive oil. The final goal is to provide the sector with postharvest methods and sorting systems for a quick evaluation of olive fruits ripeness indices.
