The present thesis analyses the Local Agrifood Systems (LASs) and in particular the production of foodstuffs at municipal level, detected using the main sources of data available at national and regional level and the amount of the demand of the school public procurement, detected through a direct survey that involved the municipalities of Lombardy, aimed at quantifying the magnitude of this demand, focusing on the demand for organic and local products.
