VALORISATION OF AUTHOCTONOUS CULTIVAR ROSCIOLA BY A PRODUCTION OF SPARKLING WINE

In the world wine scenario, the Italian viticulture, is the only case in the world for the highest number of wine varieties, with over 350 authoctonous vine. Try to do not dispose of this genetic heritage but also to rediscover and enhance our vines is a major step for the distinction and the production of unique products and quality. This may represent a major commercial boost for the area of origin especially in a scenario of an increasingly competitive world commercial. In addition, the cultivation of these indigenous grapes can safeguard the landscape of the area and a cultural continuity that related us to our past. Based on these considerations, the CRA (Consiglio per la Ricerca e la Sperimentazione in Agricoltura) \u2013 Unit\ue0 di ricerca per le produzioni enologiche dell\u2019Italia centrale, in collaboration with ARSIAL (Agenzia Regionale per lo Sviluppo e l\u2019Innovazione in Agricoltura della regione Lazio) has undertaken a series of actions aimed at recovery, characterization and valorisation of some grape varieties at risk of erosion/disappearance. This work, conducted over several years has provided a series of viticultural and enological surveys. The viticultural aspects has involved the mapping and identification of Rosciola\u2019s vine in the territories of origin and the ampelographic description of the variety and identification of genotype. The study on wine has identified the types of wines that well characterize the cultivars and to value the physical-chemical parameters and sensory.
