Prime cuts in Gallega breed lambs represent 62.6 percent in suckling and ternasco types and 61.71 p.100 for light ternasco type, with a little variation in the commercial pieces proportions. As it increases the weight alive, an increase of the weight of the pieces takes place, but the proportion of cuts of first tends to stay constant and the slight increase that takes place in the pieces of third is at the cost of those of second category. As far as the effect sex, we appre-ciated a greater proportion of cuts of first category in female (62.82 percent vs 61.57 percent), that takes place fundamentally at the cost of hind ribs proportionally greater (21.81 percent vs 19.96 percent), although in the rest of the cuts there are not important differences. When we analyzed the proportions, the cuts follow this order decreasing: leg, hind ribs, shoulder, breast-brisket, neck, fore ribs and tail, that they have values very similar to other Spanish breeds. The allometric coefficients do not throw significant differences with respect to the growth based on sex, childbirth type or commercial type that we considered.
