The American system of baking has changed significantly since the Industrial Revolution, where mechanized bakeries monopolized the production of bread. Not only is this product less flavorful than homemade, it is less nutritious and ridden with chemical additives. Bread has been an object of great significance, and it has lost that in its modern state. I went about reclaiming the loaf by baking my way backwards through history and writing about it for others to see.
