The quality and quantity of amylose are two important factors that determine the quality of paddy. The feasibility of developing a technique for rapid monitoring of paddy quality by using Fourier Transform - Near Infrared (FT-NIR) Spectroscopy combined with chemometrics was investigated. Spectra of 250 paddy samples were collected by using an integrating sphere accessory. The amylose content was analyzed by reference method. It ranged from 13.24 to 27.93%.
