Dans le cadre d'un programme d'étude des sources de contamination par l'ochratoxine A et de sa présence dans les fèves de cacao, les résultats obtenus en Côte d'Ivoire et au Togo suggèrent que la présence d'OTA est liée aux pratiques de travail post-récolte et aux conditions climatiques. Le but de notre étude était de compléter ces travaux en identifiant plus précisément les facteurs qui favorisent l'apparition d'OTA durant la phase post-récolte et plus particulièrement durant la récolte, l'ouverture des cabosse, et durant les phases de fermentation et de séchage.
