Les caractéristiques chimiques de 18 échantillons de grains de maïs ayant une gamme étendue de propriétés physiques ont été analysées. La mesure de la détérioration de l'amidon montre que celui-ci se comporte comme un filler passif dans l'endosperme. La quantité et la qualité des protéines de l'endosperme, déterminées à partir de leur extractibilité par la technique HPLC, sont corrélées aux propriétés physiques du grain. La vitrosité des protéines de l'endosperme et les propriétés mécaniques du grain dépendent de différents composants. La vitrosité semble être liée à la proportion (%) de deux fractions de gamma-zéine alors que la fiabilité augmente quand le contenu en alpha-zéine décroît et quand les sels protéiques extractibles augmenten
