This study aims to determine the number of Bacterial Cells and the amount of mold with the addition of carrageenan and sorbitol. The material used in this study is cow milk type of cattle Friesien Holland (FH). Cow's milk is taken from PSO Maju Mapan Jabung. This research method used experimental method with Factorial Random Block Design. The variables measured in this study are Number of Bacterial Cells and the number of molds. Data on bacterial cell count and total molds were analyzed descriptively quantitatively.
