PENGARUH SUHU DAN WAKTU EKSTRAKSI TERHADAP KADAR KAFEIN DALAM TEH HITAM PRODUKSI SEMUGIH (Effect Of Temperature And Time Extraction of Caffeine Content in Semugih Black Tea Production)

Pengaruh Suhu Dan Waktu Ekstraksi Terhadap Kadar Kafein Dalam Teh Hitam Produksi Semugih Teh Hitam merupakan teh yang saat ini paling banyak dikonsumsi oleh masyarakat Indonesia. Teh hitam adalah jenis teh yang dalam pengolahannya melalui proses fermentasi secara penuh. Fermentasi tidak menggunakan mikroba sebagai sumber enzim, tetapi menggunakan enzim polyphenol oksidase yang terdapat didalam daun teh itu sendiri. Konsumsi seduhan teh hitam melebihi dua cangkir per hari dapat mengakibatkan dampak terhadap kesehatan sebab teh mengandung 20-90 mg kafein per cangkir, sedangkan batas maksimum kafein adalah 150 mg per hari dan batas maksimum kafein adalah 0,02 % pada makanan dan minuman. Praktikum ekstraksi daun teh hitam produksi Semugih menggunakan ekstraktor hydrothermal dilengkapi dengan pengaduk sehingga membantu proses ekstraksi kafein yang terdapat dalam daun teh hitam. Ektraksi ini menggunakan bahan daun teh kering 600 gram dengan pelarut aquades 5 liter dan berlangsung pada kondisi suhu 70 o C dengan variable waktu 0,15, 30, 45, 60, dan 75 menit. Pada praktikum tugas akhir menganalisa konsentrasi kafein menggunakan alat spektrofotometri UV Visibel dengan sampel teh hijau yang telah diekstrak pada panjang gelombang 560 nm. Dalam pembuatan kurva kalibrasi menggunakan kafein dalam kopi sebagai larutan standar. Berdasarkan hasil pembahasan yang diperoleh maka dapat disimpulkan konsentrasi kafein pada teh hijau yang dihitung berdasarkan kurva larutan standar yang dihasilkan memiliki konsentrasi 0,012 ; 0,029 ; 0,041 ; 0,039 (mg/l). Pada perhitungan ketidak pastian sampel kafein teh hitam didapat 7,1% sehingga kepastian kurva sampel teh hitam 92,9%. Sedangkan nilai validasi atau ketelitian alat pada uji sampel sebesar 94,47% dan akurasi sebesar 98,14 %. With the results of possible comparisons, it can be centrifuged on green tea which is calculated based on the standard curve which has a concentration of 0.012; 0.029; 0.041; 0.039 (mg / l). At the conclusion of uncertainty black caffeine samples obtained 7.1% certainty of black samples of 92.9%.
