Most of the spectroscopy applications present in literature rely on spot measurements using infrared (near or mid) or visible ranges. More recently, a diverse range of hyperspectral devices, including cameras and spectral imaging, can acquire single or multiple images at selected wavelengths, expanding the possibilities of analysis and enhancing the potential for detection of specific quality attributes in an extensive range of crops and horticultural products. This chapter provides a general overview of the fundamentals of vibrational spectroscopy and describes the main methods and techniques applied in crop and plant analysis
