Propolis has health benefits that are attributed to the presence of phenolic compounds, but due to its strong taste and odor and low solubility in water, its application in food is limited. The encapsulation technique protects the bioactive compounds from degradation, in addition makes possible their release under specific conditions and increase their solubility. This technique was used to minimize the undesirable properties of propolis and its application in varied products, maintaining its biological activities.
