This article focuses on how food design may improve territorial development. It concerns products made by culinary craftsmen. We first show how local food products may improve the attractiveness of a region. An empirical study on consumers’ perception of two food local products is then presented. The findings show that food design could be an economic opportunity. However, it must be part of a global territorial development strategy in order to be understood by consumers.
