This bachelor thesis deals with the evaluation of the production parameters of selected assortment of salad beet varieties. A small-parcel experiment was established in six varieties (Alexis, Betina, Burpee's golden, D'Eggyte, Choggia, Karkulka). In the experiment the yield of boulevues from the area unit, the average bulk weight, the dry matter content, the carbohydrate content, the dry matter content in the dry matter (N x 6.25), the antioxidant activity and the color of the flour were determined
