+++ The activity of bacterial suspensions responsible for malolactic fermentation in wines was studied. Methods of purification of bacterial extracts which catalyse this transformation are described. The existence of a particular malolactic enzyme which ensures the conversion of malate into lactate without the intervention of lactate dehydrogenases was shown
