Mannosylglycerate (MG) is a compatible solute implicated in the response to osmotic or heat stresses in many marine microorganisms adapted to hot environments. MG shows a remarkable ability to protect model proteins, especially against heat denaturation; however, high production costs prevented the industrial exploitation of these features. This thesis has two main objectives: i) to assess the efficacy of MG as protein stabilizer in the intracellular milieu; and ii) to develop a bio-based process for production of MG at competitive cost.
