This article is a synthesis about zooarchaeological research led on the city of Nîmes. Under the Roman control, eastern Languedoc became an administrative and politic entity during the first century BC. In this transitional context, society was deeply influenced by the Roman socio-economic model. It is through mammals bones that meat diet topic is discussed to understand the new dynamics between the 2nd century BC and 2nd century AD. The results show that the new organisation changed the distribution systems, especially the butchering practices from the augustean period, while bringing to light two supplying dynamics : first within the framework of trade, and second within the framework of domestic activities.L’article propose une synthèse ...
