A multiplicity of grapes - grapes of vat - have long characterized the making of wine. We present Californian producer's and merchant's fondness for new wine varities, whose pratices and cultural origins are situated in France, notably in Aquitaine and Burgundy. We interpret this "new grapes variety" as an attempt at social, economic and cultural appropriation through new techniques wine growing, oenology and marketing.Une multiplicité de cépages — raisins de cuve — caractérise la fabrication du vin depuis ses origines.
