Habitudes alimentaires dans l'arrière-pays cannois

The last thirty years have a quite special significance as far as the study of food patterns in the hinterland of Cannes is concerned : old practices based on self-sufficient farming, a certain degree of community isolation and a preference for local traditions, have been pushed aside in next to no time by urban pressures exerted from the coastal regions, first on the surrounding areas, and then on the hinterland. As a result of the craving for the mountains, the tourist exerts his influence on the region, an influence not to be mistaken for that which originates from the coast. The original inhabitants, no longer isolated but now exposed to the influence of outside foods and to quite different attractions, are tending to come to terms and keep up with the new types of food fairly quickly. The local foods, supported by « strangers » or nostalgic townspeople anxious to preserve local traditions, have resisted well, thus giving rise to a strange combination of old and new, which doesn't always give the hinterland back its former individuality, determined by the daily and seasonal food patterns.Les dernières trente années ont une signification tout à fait particulière pour l'étude des comportements alimentaires dans l'arrière-pays cannois : de vieilles pratiques fondées sur l'autoproduction agricole, un certain isolement communal et un attachement aux traditions locales, sont bousculées en moyen-pays d'abord, dans l'arrière-pays ensuite. L'engouement pour la montagne finit par provoquer une emprise directe du touriste en quête d'une résidence secondaire, sans qu'il s'insère forcément dans le phénomène de progression urbaine qui s'exerce depuis la Côte. La population autochtone, désenclavée mais aussi exposée aux influences alimentaires extérieures et aux sollicitations les plus diverses, tend à s'aligner assez rapidement sur les nouvelles modes de nutrition. La résistance de la gastronomie du pays très vite soutenue par les « estrangers » ou citadins en mal de folklore, suscite une association originale de l'ancien et du moderne, sans toutefois rendre à l'arrière-pays sa personnalité d'autrefois fortement appuyée sur le rythme alimentaire quotidien et saisonnier.Wackermann Gabriel.
