The last thirty years have a quite special significance as far as the study of food patterns in the hinterland of Cannes is concerned : old practices based on self-sufficient farming, a certain degree of community isolation and a preference for local traditions, have been pushed aside in next to no time by urban pressures exerted from the coastal regions, first on the surrounding areas, and then on the hinterland.
