Jean-Michel Chevet.Agricultural production and productivity : a model of economic development in the Parisian rural area in the 18th and the 19th centuries. Historians studying the agricultural revolution are mostly only focused on the evolution of the yields of the cereals used in bread. This paper is aimed to go further this restrictive standpoint by taking position for an increase of the output. Based on the agronomical notion of « export of mineral units » the paper gives a global assessment of the improvements taking place since the end of the 17th century till the middle of the 19th, in the region of Paris.
