Gastronomic routes: urban, social, economic and tourist development in cities

This article is a proposal of a research project that seeks the influence of the gastronomic routes in urban and tourist of developed cities, and also is a design of a gastronomic route for Bogotá. The relevance of the research is because of a national and international tourism development in Bogotá, they are familiar with gastronomic routes in various regions and countries. It will be developed in three stages, the first stage is the information research through documents related with the issue, the second stage will be surveys and interviews with owners and managers of a sample of specialized restaurants in Bogota, Colombia.Este artículo es la propuesta de un proyecto de investigación que busca identificar la influencia de las rutas gastronómicas en el desarrollo urbano y turístico de las ciudades, y diseñar y proponer una Ruta Gastronómica para Bogotá. La relevancia de la investigación radica en que actualmente arriban a Bogotá incontables turistas internacionales de alto nivel cultural, los cuales son conocedores de las rutas gastronómicas de diversas regiones y países. La investigación se realizará en tres momentos, el primero analizará la información de los documentos relacionados con el tema, en el segundo momento se realizarán encuestas y entrevistas a dueños y administradores de restaurantes de alto nivel de Bogotá, especializados en comida colombiana
