Physico-chemical Characteristics and Mineral Contents of Some Apricot (Prunus armeniaca L.) Genotypes Grown in Iğdır Province

Bu çalışmada; Iğdır yöresinde yetiştirilen altı kayısı genotipine ait meyvelerin fizikokimyasal özellikleri (meyve ağırlığı, çekirdek ağırlığı, çekirdek iç ağırlığı, SÇKM, asitlik, pH) ile taze meyve ve iç çekirdeklerinin protein ve mineral madde (K, Mg, Ca, Cu, Zn, Fe ve Mn) içeriklerinin belirlenmesi amaçlanmıştır. Beyaz kayısı çeşidi 52.91 g ile en iri meyvelere, Teberze çeşidi % 24.00 ile en yüksek SÇKM değerine sahip olduğu bulunmuştur. Protein ve mineral madde içeriklerinin iç çekirdeklerde taze meyveden daha yüksek olduğu tespit edilmiştir. İncelenen kayısılarda ortalama yaş meyve K, Mg, Ca, Cu, Zn, Fe ve Mn içerikleri sırasıyla 198.25, 11.57, 12.36, 0.18, 0.09, 0.67 ve 0.06 mg 100g-1 düzeyinde tespit edilmiştir. Genotiplerin ortalama iç çekirdek K, Mg, Ca, Cu, Zn, Fe ve Mn içeriklerinin ise sırasıyla 597.57, 147.46, 35.95, 1.29, 2.16, 2.40 ve 0.42 mg 100g-1 olduğu saptanmıştır. Kayısı genotiplerinin yaş meyve ortalama protein içeriği % 0.76, iç çekirdek ortalama protein içeriğinin ise % 26.06 seviyesinde bulunmuştur.
