This manuscript presents a synthesis of my research activities since I have been recruited at Irstea. It outlines fifteen years of work to catch the dynamics of turbulent flows by combining metrology, simu- lations and advanced signal processing methodologies. The first chapter presents, the research and the methodological developments to dis- criminate the most energetic structures from PIV and DNS fields into non-canonical turbulent flows that can be found in air conditioning. In a second chapter a hot-wire anemometry technique giving simultaneous velocity and temperature measurements is presented.
