Objective. Traditionally processed Coffee (Coffea arabica) of the Caturra and Colombia varieties from 19 farms from Chachagüí (Nariño, Colombia), was characterized. Materials and methods. The farms were selected and the cherry coffee was subjected to a traditional humid process. Then, three samples /farm of dried parchment coffee were collected to perform the analysis and the variables evaluated were mutually correlated, in order to establish the relationship degrees among them.
