Natural dye substances have been generated from many types of plants, such as red dragon fruit skin. The dragon fruit skin produces a red color derived from the anthocyanin pigment. Variations that are done are skin of dragon fruit skin 5 gram, 10 gram, 15 gram, 20 gram and 25 gram. Then the extraction of dragon fruit skin pigment was analyzed using Visibel Spectrometer with wavelength of 450 nm to determine the absorbance rate of pigment. The results showed that the greater the mass of the dragon fruit skin, the higher the level of obstruction of the pigment. So that the dragon fruit skin is potential as a natural dye in food.
