La calidad de los procesos de elaboración de productos lácteos artesanales, desde el punto de vista de higiene y cumplimiento de reglamentos y normas oficiales es un fenómeno que no ha sido completamente investigado, salvo ciertos trabajos enfocados a la calidad final del queso y por estudios con un reducido número de observaciones.
