El objetivo del presente trabajo de tesis fue estudiar la estabilidad de un extracto de licopeno obtenido de una fuente natural no convencional como el pomelo rosado a partir de su encapsulación en cápsulas de polielectrolitos sometidas a procesos de congelación y deshidratación. Se emplearon distintos polielectrolitos como alginato, pectina, quitosano con la adición de varias gomas y azúcares como trehalosa y β- ciclodextrina para estudiar la influencia de la composición de las cápsulas sobre las propiedades fisicoquímicas y sobre la estabilidad del licopeno encapsulado, buscando establecer vínculos de estructura/función relacionados a la estabilidad.
