Stability of Mozzarella cheese was studied under 5 modified atmospheres (vacuum, air, and mixtures of carbon dioxide/nitrogen) during one month. Samples, packaged in barrier bags and stored at 4ºC, were weekly evaluated to investigate the behavior of the composition of headspace gases, acidity, peroxide value, and microbial quality. The composition of headspace gases was modified since the concentration of O2 was increased and the CO2 was decreased. Modified atmospheres did not influence acidity; however, their usage for reducing the peroxide index trough O2 elimination was confirmed.
