Diferentes aspectos y disciplinas se han incluido en esta tesis para desentrañar los efectos de la baja temperatura sobre las levaduras vínicas. Los resultados incluidos en el 1º y 2º capítulos de esta tesis aportan datos empíricos originalescon el fin de comprender cómo la temperatura influye en la evolución del género Saccharomyces y en su ecología en ambientes vínicos. Los capítulos 3º y 4º incluyen un análisis proteómico de la levadura durante lavinificación a bajas temperaturas y un análisis de genómica funcional, que han permitido detectar y analizar el rol de genes potencialmente importantes en las fermentaciones vínicas a bajas temperaturas.
