We studied influence of mist-chilling on shelf life of strawberries. Mist-chilling uses an air-water flow with small suspended droplets as a cooling medium. Strawberries from "Darestival" cultivar were chilled by three different treatments : a control treatment, with almost saturated air, and two different mist-chilling treatments : one with low water supply (9g/kg of strawberries), and one with high water supply (19g/kg of strawberries). They were stored for seven days at 6°C. During storage, their quality was assessed by weight losses, firmness, color, soluble sugar, titrable acidity and pH.
