NIR is a powerful technique to measure major compounds in agricultral and food products. In this paper are discussed the principles of NIR spectroscopy, the available spectrometers, the chemometric techniques most used, the current applications in food and agricultural products and the future trends (NIR imaging). / Le proche infrarouge est une technique puissante pour mesurer les quantités en composés majeurs dans les produits agricoles et alimentaires.
