Acidity level is one of the main factors influencing quality of Champagne wine. Predicting the acid potential of each wine is important for winemakers who have to choose the wine-making process as soon as the must arrives in the cave. In order to help the decision of winemakers, various models have been tested. Using neural networks models enables improvement in the predicition by comparison to linear or quadratic models, even if the results remain below the analytical constraints. The neural network model was built on laboratory data, and has been sucessfully tested on industrial data with satisfying robustness.
