The purpose of this research is to develop an appraisal tool of the quality of turkey carcass lots in processing plants. The study of carcass conformation by digital vision is now carried out in 3 phases : - image acquisition of carcasses ; - development of 3 processing methods ; - sizing of carcass morphological features.
