In the introduction an update on refrigeration and its application on the eve of the 21st century is presented, complete with figures, in order to give an idea of its scope. In spite of the enormous progress made in this sector of the economy, there remain considerable social and economic challenges to be met in the years to come. In the social sphere refrigeration is called upon to meet the qualitative and quantitative food needs of the world's rapidly growing and increasingly poor population. Both the benefits and drawbacks of refrigeration are presented in this paper.
