An efficient cold chain allows freshness of vegetables and flavour of fruits which are advantages in a quantitatively supplied market. The postharvest temperature falling down must occurr precociously, and in most cases, rapidly. These requirements are difficult to be respected with prepacked and stacked products. A measuring method and sensors have been developped to have access to the heat and mass transfer conditions inside a bulky handling unit like a pallet.
